A quick and easy Italian salad bursting with fresh vegetables and a tangy vinaigrette.
Ingredients

- 150g / 5 oz mixed greens
- 250g / 1 cup cherry tomatoes, halved
- 1 medium cucumber, peeled and sliced
- 1/4 medium red onion, thinly sliced
- 1/2 bell pepper, any color, chopped
- 50g / 1/4 cup Kalamata olives, pitted and halved
- 1/4 cup fresh basil, chopped
- 60ml / 1/4 cup extra virgin olive oil
- 30ml / 2 tablespoons red wine vinegar
- 1 teaspoon dried oregano
- Salt and Black Pepper to taste
Instructions
- Wash and dry all vegetables. Halve the cherry tomatoes, slice the cucumber, and thinly slice the red onion. Chop the bell pepper and basil.
- In a small bowl or jar, whisk together the olive oil, red wine vinegar, dried oregano, salt, and black pepper.
- In a large bowl, combine the mixed greens, cherry tomatoes, cucumber, red onion, bell pepper, and Kalamata olives. Pour the vinaigrette over the salad and gently toss.
- Garnish with fresh basil and serve immediately.
Notes
- Make Ahead: Chop the vegetables ahead of time, but dress the salad just before serving.
- Red Onion Tip: Soak the sliced red onion in cold water for 10 minutes to mellow its bite.
