Description

A quick and easy Italian salad bursting with fresh vegetables and a tangy vinaigrette.


Ingredients

  • 150g / 5 oz mixed greens
  • 250g / 1 cup cherry tomatoes, halved
  • 1 medium cucumber, peeled and sliced
  • 1/4 medium red onion, thinly sliced
  • 1/2 bell pepper, any color, chopped
  • 50g / 1/4 cup Kalamata olives, pitted and halved
  • 1/4 cup fresh basil, chopped
  • 60ml / 1/4 cup extra virgin olive oil
  • 30ml / 2 tablespoons red wine vinegar
  • 1 teaspoon dried oregano
  • Salt and Black Pepper to taste

Instructions

  1. Wash and dry all vegetables. Halve the cherry tomatoes, slice the cucumber, and thinly slice the red onion. Chop the bell pepper and basil.
  2. In a small bowl or jar, whisk together the olive oil, red wine vinegar, dried oregano, salt, and black pepper.
  3. In a large bowl, combine the mixed greens, cherry tomatoes, cucumber, red onion, bell pepper, and Kalamata olives. Pour the vinaigrette over the salad and gently toss.
  4. Garnish with fresh basil and serve immediately.

Notes

  • Make Ahead: Chop the vegetables ahead of time, but dress the salad just before serving.
  • Red Onion Tip: Soak the sliced red onion in cold water for 10 minutes to mellow its bite.
