Description

Juicy chicken breasts seared to perfection and simmered in a rich, sweet, and tangy apple cider sauce with fresh apples and a hint of cinnamon, all in one skillet.


Ingredients

  • 4 boneless, skinless chicken breasts (approx. 600g / 1.3 lbs)
  • 1 teaspoon (5g) salt
  • 1/2 teaspoon (2g) black pepper
  • 2 tablespoons (30ml) olive oil
  • 1 large apple, peeled and sliced (approx. 200g)
  • 1/2 cup (120ml) chicken broth
  • 1/2 cup (120ml) apple cider
  • 2 tablespoons (30ml) maple syrup
  • 1 tablespoon (15ml) apple cider vinegar
  • 1 teaspoon (5g) Dijon mustard
  • 1/4 teaspoon (1g) ground cinnamon
  • 1 tablespoon (8g) cornstarch mixed with 2 tablespoons (30ml) water
  • 2 tablespoons (10g) chopped fresh parsley, for garnish

Instructions

  1. Season the chicken breasts with salt and pepper.
  2. Heat the olive oil in a large skillet over medium-high heat. Add the chicken breasts and cook for 5-7 minutes per side, or until golden brown and cooked through. Remove the chicken from the skillet and set aside.
  3. Add the sliced apple to the skillet and cook for 3-4 minutes, or until softened.
  4. Pour in the chicken broth, apple cider, maple syrup, apple cider vinegar, Dijon mustard, and cinnamon. Bring to a simmer, scraping up any browned bits from the bottom of the skillet.
  5. Stir in the cornstarch mixture and cook for 1-2 minutes, or until the sauce has thickened.
  6. Return the chicken breasts to the skillet and spoon the apple cider sauce over the top. Reduce heat to low, cover, and simmer for 5-10 minutes, or until the chicken is heated through.
  7. Garnish with fresh parsley and serve immediately.

Notes

  • Apple Choice: Use firm, sweet-tart apples like Honeycrisp or Fuji for the best texture and flavor.
  • Sauce Consistency: If the sauce is too thick, add a splash of chicken broth. If too thin, simmer for a few more minutes or add a bit more cornstarch slurry.
  • Don’t Overcook Chicken: Use a meat thermometer to ensure chicken reaches 165°F (74°C) to prevent dryness.
