Ingredients

  • 1/2 cup chicken broth
  • 1 cup long-grain rice, rinsed
  • 2 lbs boneless, skinless chicken thighs
  • 1 lemon, thinly sliced
  • 2 tablespoons olive oil
  • 1 tablespoon dried Italian herbs
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 cups chopped vegetables (broccoli, carrots, peas)

Instructions

  1. Pour chicken broth into the slow cooker.
  2. Add the rinsed rice to the slow cooker, spreading it evenly.
  3. Place the chicken thighs on top of the rice.
  4. Arrange lemon slices over the chicken.
  5. Drizzle olive oil over the chicken and lemon.
  6. Sprinkle Italian herbs, garlic powder, salt, and pepper evenly over the chicken.
  7. Cover and cook on low for 6-8 hours or on high for 3-4 hours, or until chicken is cooked through and rice is tender.
  8. Stir in the chopped vegetables during the last 30 minutes of cooking time.
  9. Let stand for 10 minutes before serving.
