Easy, flavorful slow cooker lemon herb chicken and rice for busy weeknights!
Ingredients

- 1/2 cup chicken broth
- 1 cup long-grain rice, rinsed
- 2 lbs boneless, skinless chicken thighs
- 1 lemon, thinly sliced
- 2 tablespoons olive oil
- 1 tablespoon dried Italian herbs
- 1 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 cups chopped vegetables (broccoli, carrots, peas)
Instructions
- Pour chicken broth into the slow cooker.
- Add the rinsed rice to the slow cooker, spreading it evenly.
- Place the chicken thighs on top of the rice.
- Arrange lemon slices over the chicken.
- Drizzle olive oil over the chicken and lemon.
- Sprinkle Italian herbs, garlic powder, salt, and pepper evenly over the chicken.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours, or until chicken is cooked through and rice is tender.
- Stir in the chopped vegetables during the last 30 minutes of cooking time.
- Let stand for 10 minutes before serving.
Notes
- Tip: For extra flavor, toast the Italian herbs in a dry pan for a minute before adding them.
- Substitution: Use chicken breasts instead of thighs, but reduce cooking time to prevent drying out.
