These slow cooker mashed potatoes are incredibly creamy, rich, and taste shockingly homemade with minimal effort. The ultimate hands-off comfort food side dish!


Ingredients

  • 5 lbs (approx. 2.25 kg) Yukon Gold potatoes, peeled and quartered
  • 1 cup (approx. 240 ml) chicken broth
  • 8 oz (approx. 225 g) cream cheese, softened
  • 1/2 cup (approx. 113 g) butter, cut into pieces
  • 1 teaspoon (5 ml) garlic powder
  • 1 teaspoon (5 ml) onion powder
  • 1/2 teaspoon (2.5 ml) salt, or more to taste
  • 1/4 teaspoon (1.25 ml) black pepper, or more to taste
  • 1/4 cup (approx. 60 ml) milk (optional, for thinning)
  • 2 tablespoons (approx. 30 ml) chopped fresh chives or parsley, for garnish

Instructions

  1. Place the peeled and quartered potatoes into a slow cooker.
  2. Pour the chicken broth over the potatoes.
  3. Add the softened cream cheese and butter pieces on top of the potatoes.
  4. Sprinkle with garlic powder, onion powder, salt, and pepper.
  5. Cover the slow cooker and cook on low for 6-8 hours, or on high for 3-4 hours, or until the potatoes are very tender and easily pierced with a fork.
  6. Once the potatoes are cooked, use a potato masher or an electric mixer to mash the potatoes until smooth. If using an electric mixer, be careful not to overmix, as this can make the potatoes gummy.
  7. If the mashed potatoes are too thick, add milk, a tablespoon at a time, until you reach your desired consistency.
  8. Taste and adjust seasonings as needed, adding more salt and pepper to taste.
  9. Transfer the mashed potatoes to a serving dish and garnish with chopped fresh chives or parsley.
  10. Serve hot and enjoy!
