These slow cooker mashed potatoes are incredibly creamy, rich, and taste shockingly homemade with minimal effort. The ultimate hands-off comfort food side dish!

- 5 lbs (approx. 2.25 kg) Yukon Gold potatoes, peeled and quartered
- 1 cup (approx. 240 ml) chicken broth
- 8 oz (approx. 225 g) cream cheese, softened
- 1/2 cup (approx. 113 g) butter, cut into pieces
- 1 teaspoon (5 ml) garlic powder
- 1 teaspoon (5 ml) onion powder
- 1/2 teaspoon (2.5 ml) salt, or more to taste
- 1/4 teaspoon (1.25 ml) black pepper, or more to taste
- 1/4 cup (approx. 60 ml) milk (optional, for thinning)
- 2 tablespoons (approx. 30 ml) chopped fresh chives or parsley, for garnish
Instructions
- Place the peeled and quartered potatoes into a slow cooker.
- Pour the chicken broth over the potatoes.
- Add the softened cream cheese and butter pieces on top of the potatoes.
- Sprinkle with garlic powder, onion powder, salt, and pepper.
- Cover the slow cooker and cook on low for 6-8 hours, or on high for 3-4 hours, or until the potatoes are very tender and easily pierced with a fork.
- Once the potatoes are cooked, use a potato masher or an electric mixer to mash the potatoes until smooth. If using an electric mixer, be careful not to overmix, as this can make the potatoes gummy.
- If the mashed potatoes are too thick, add milk, a tablespoon at a time, until you reach your desired consistency.
- Taste and adjust seasonings as needed, adding more salt and pepper to taste.
- Transfer the mashed potatoes to a serving dish and garnish with chopped fresh chives or parsley.
- Serve hot and enjoy!
