Ingredients

- 1/2 cup (60g) all-purpose flour
- 1/4 cup (50g) granulated sugar
- 1/4 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/4 teaspoon ground cinnamon
- 1/8 teaspoon ground nutmeg
- 1/4 cup (60ml) pumpkin puree
- 2 tablespoons (30ml) vegetable oil
- 1/4 cup (60ml) unsweetened applesauce
- 1 large egg
Streusel Topping:
- 2 tablespoons (15g) all-purpose flour
- 2 tablespoons (25g) packed brown sugar
- 1 tablespoon (14g) cold butter, cut into small pieces
- 1/4 teaspoon ground cinnamon
Instructions
- Preheat oven to 375°F (190°C). Line a muffin tin with 6 paper liners.
- In a medium bowl, whisk together the flour, granulated sugar, baking powder, baking soda, cinnamon, and nutmeg.
- In a separate bowl, whisk together the pumpkin puree, vegetable oil, applesauce, and egg.
- Add the wet ingredients to the dry ingredients and stir until just combined. Do not overmix.
- Prepare the streusel topping: In a small bowl, combine the flour, brown sugar, and cinnamon. Cut in the cold butter using a pastry blender or your fingers until the mixture resembles coarse crumbs.
- Fill each muffin liner about 2/3 full with batter.
- Sprinkle the streusel topping evenly over the muffins.
- Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
- Let the muffins cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
