These Snickerdoodle Protein Bites are a no-bake, high-protein snack packed with warm cinnamon flavors. Perfect for a quick energy boost or a post-workout treat!


Ingredients

    • 1 cup vanilla protein powder (80-90g, depending on brand)
    • 2 tbsp coconut oil, melted (30ml)
    • 1/4 cup maple syrup (60ml)
    • 1 tsp vanilla extract (5ml)
    • 1/2 tsp cinnamon (2.5ml)
    • 1/4 tsp nutmeg (1.25ml)
    • 1/4 tsp salt (1.25ml)
  • For the Coating:
    • 2 tbsp coconut sugar (24g)
    • 1 tsp cinnamon (5ml)

Instructions

  • Combine Ingredients: In a mixing bowl, add almond flour, protein powder, melted coconut oil, maple syrup, vanilla extract, cinnamon, nutmeg, and salt.
  • Mix the Dough: Stir until a soft, moldable dough forms. Adjust with extra maple syrup or almond flour if needed.
  • Roll into Balls: Use a tablespoon or cookie scoop to shape equal-sized balls.
  • Prepare Coating: Mix coconut sugar and cinnamon in a small bowl.
  • Coat the Bites: Roll each ball in the cinnamon-sugar mixture.
  • Chill to Set: Place bites on a plate and refrigerate for 30 minutes to firm up.
  • Enjoy! Serve chilled and store leftovers in the fridge.
