- 2 tbsp coconut oil, melted (30ml)
- 1/4 cup maple syrup (60ml)
- 1 tsp vanilla extract (5ml)
- 1/2 tsp cinnamon (2.5ml)
- 1/4 tsp nutmeg (1.25ml)
- 1/4 tsp salt (1.25ml)
- For the Coating:
- 2 tbsp coconut sugar (24g)
- 1 tsp cinnamon (5ml)
Instructions
- Combine Ingredients: In a mixing bowl, add almond flour, protein powder, melted coconut oil, maple syrup, vanilla extract, cinnamon, nutmeg, and salt.
- Mix the Dough: Stir until a soft, moldable dough forms. Adjust with extra maple syrup or almond flour if needed.
- Roll into Balls: Use a tablespoon or cookie scoop to shape equal-sized balls.
- Prepare Coating: Mix coconut sugar and cinnamon in a small bowl.
- Coat the Bites: Roll each ball in the cinnamon-sugar mixture.
- Chill to Set: Place bites on a plate and refrigerate for 30 minutes to firm up.
- Enjoy! Serve chilled and store leftovers in the fridge.
Notes
- If the dough is too dry, add a splash of almond milk.
- Swap maple syrup with honey or agave for a different sweetness profile.
