Soft and chewy cinnamon roll flavor in a simple sugar cookie!
Ingredients

- 1/2 cup (1 stick) unsalted butter, softened
- 1/2 cup granulated sugar
- 1/4 cup packed light brown sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 1/2 cups all-purpose flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
For the Cinnamon Filling:
- 2 tablespoons unsalted butter, softened
- 1/4 cup packed light brown sugar
- 1 tablespoon ground cinnamon
For the Cream Cheese Frosting:
- 4 ounces cream cheese, softened
- 1/4 cup (1/2 stick) unsalted butter, softened
- 1 1/2 cups powdered sugar
- 1/2 teaspoon vanilla extract
- 1–2 tablespoons milk
Instructions
- Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
- In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
- Beat in the egg and vanilla extract.
- In a separate bowl, whisk together the flour, baking soda, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
- Divide the dough in half. On a lightly floured surface, roll out one half of the dough into a 12×8 inch rectangle.
- In a small bowl, combine the softened butter, brown sugar, and cinnamon for the filling. Spread half of the cinnamon filling evenly over the rolled-out dough.
- Starting from one of the long ends, tightly roll up the dough into a log. Slice the log into 1/2-inch thick rounds.
- Place the cookie rounds onto the prepared baking sheets, leaving about 2 inches between each cookie.
- Repeat with the remaining dough and filling.
- Bake for 8-10 minutes, or until the edges are lightly golden. Let cool on the baking sheets for a few minutes before transferring to a wire rack to cool completely.
- While the cookies are cooling, prepare the cream cheese frosting. In a large bowl, beat together the softened cream cheese and butter until smooth and creamy.
- Gradually add the powdered sugar, mixing until well combined.
- Stir in the vanilla extract and milk until the frosting reaches your desired consistency.
- Once the cookies are completely cool, frost them generously with the cream cheese frosting.
