Soft and chewy cinnamon roll flavor in a simple sugar cookie!


Ingredients

  • 1/2 cup (1 stick) unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/4 cup packed light brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt

For the Cinnamon Filling:

  • 2 tablespoons unsalted butter, softened
  • 1/4 cup packed light brown sugar
  • 1 tablespoon ground cinnamon

For the Cream Cheese Frosting:

  • 4 ounces cream cheese, softened
  • 1/4 cup (1/2 stick) unsalted butter, softened
  • 1 1/2 cups powdered sugar
  • 1/2 teaspoon vanilla extract
  • 12 tablespoons milk

Instructions

  1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  3. Beat in the egg and vanilla extract.
  4. In a separate bowl, whisk together the flour, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  6. Divide the dough in half. On a lightly floured surface, roll out one half of the dough into a 12×8 inch rectangle.
  7. In a small bowl, combine the softened butter, brown sugar, and cinnamon for the filling. Spread half of the cinnamon filling evenly over the rolled-out dough.
  8. Starting from one of the long ends, tightly roll up the dough into a log. Slice the log into 1/2-inch thick rounds.
  9. Place the cookie rounds onto the prepared baking sheets, leaving about 2 inches between each cookie.
  10. Repeat with the remaining dough and filling.
  11. Bake for 8-10 minutes, or until the edges are lightly golden. Let cool on the baking sheets for a few minutes before transferring to a wire rack to cool completely.
  12. While the cookies are cooling, prepare the cream cheese frosting. In a large bowl, beat together the softened cream cheese and butter until smooth and creamy.
  13. Gradually add the powdered sugar, mixing until well combined.
  14. Stir in the vanilla extract and milk until the frosting reaches your desired consistency.
  15. Once the cookies are completely cool, frost them generously with the cream cheese frosting.
