Soft & Chewy Cookie Monster Cookies are guaranteed to bring a smile to your face. Inspired by everyone’s favorite blue monster, these cookies are perfect for kids and adults alike!


Ingredients

  • 1/2 cup (1 stick) unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/4 cup packed light brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup semi-sweet chocolate chips
  • 1/2 cup blue candy melts or blue M&Ms
  • 1 cup powdered sugar
  • 23 tablespoons milk
  • Blue food coloring
  • Mini chocolate chips or small candies for eyes
  • Small cookies for “mouth”

Instructions

  1. Preheat oven to 375°F (190°C) and line baking sheets with parchment paper.
  2. Cream together butter, granulated sugar, and brown sugar until light and fluffy.
  3. Beat in egg and vanilla extract until well combined.
  4. In a separate bowl, whisk together flour, baking soda, and salt.
  5. Gradually add dry ingredients to wet ingredients, mixing until just combined. Do not overmix.
  6. Stir in chocolate chips and blue candy melts or M&Ms.
  7. Drop by rounded tablespoons onto prepared baking sheets, leaving space between each cookie.
  8. Bake for 8-10 minutes, or until edges are lightly golden brown.
  9. Let cool on baking sheets for a few minutes before transferring to a wire rack to cool completely.
  10. While cookies are cooling, whisk together powdered sugar and milk until smooth. Add blue food coloring until desired shade is reached.
  11. Once cookies are cooled, frost the top of each cookie with blue icing.
  12. Place mini chocolate chips or small candies on the wet icing to create eyes.
  13. Use small cookies to create a “mouth” on each cookie.
  14. Let the icing set before serving.
