Soft & Chewy Lemon Cookies bursting with sunshine in every bite! Easy to make and delightful to share.


Ingredients

  • 1/2 cup (1 stick) unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1/4 cup lemon juice
  • 2 teaspoons lemon zest
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt

For the Glaze:

  • 1 cup powdered sugar
  • 23 tablespoons lemon juice

Instructions

  1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
  3. Beat in the eggs one at a time, then stir in the lemon juice and lemon zest.
  4. In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  6. Drop by rounded tablespoons onto the prepared baking sheets.
  7. Bake for 9-11 minutes, or until the edges are lightly golden.
  8. Let cookies cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.
  9. For the glaze, in a small bowl, whisk together the powdered sugar and lemon juice until smooth. Add more lemon juice if needed to reach desired consistency.
  10. Once the cookies are completely cool, drizzle the glaze over the tops of the cookies. Let the glaze set before serving.

  • Freezing: Freeze unglazed cookies in a freezer-safe bag for up to 2 months. Thaw at room temperature before glazing.
