Ingredients

- 1/2 cup (1 stick) unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1/4 cup lemon juice
- 2 teaspoons lemon zest
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
For the Glaze:
- 1 cup powdered sugar
- 2–3 tablespoons lemon juice
Instructions
- Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
- In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
- Beat in the eggs one at a time, then stir in the lemon juice and lemon zest.
- In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
- Drop by rounded tablespoons onto the prepared baking sheets.
- Bake for 9-11 minutes, or until the edges are lightly golden.
- Let cookies cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.
- For the glaze, in a small bowl, whisk together the powdered sugar and lemon juice until smooth. Add more lemon juice if needed to reach desired consistency.
- Once the cookies are completely cool, drizzle the glaze over the tops of the cookies. Let the glaze set before serving.
Notes
- Storage: Store in an airtight container at room temperature for up to 3 days.
- Freezing: Freeze unglazed cookies in a freezer-safe bag for up to 2 months. Thaw at room temperature before glazing.
