Sparkling Pineapple Lemonade

Description

A bright and bubbly drink combining tangy lemons with tropical pineapple!


Ingredients

Scale
  • 1 cup (240ml) fresh lemon juice (about 68 lemons)
  • 1 cup (200g) granulated sugar
  • 4 cups (950ml) water, divided
  • 2 cups (470ml) pineapple juice
  • Ice cubes
  • Sparkling water or club soda
  • Lemon slices and pineapple wedges, for garnish (optional)

Instructions

  1. In a small saucepan, combine 1 cup of water and 1 cup of sugar. Heat over medium heat, stirring constantly, until the sugar is completely dissolved. Remove from heat and let cool slightly.
  2. In a large pitcher, pour the fresh lemon juice, pineapple juice, and the cooled simple syrup. Add the remaining 3 cups of water and stir well to combine. Taste and adjust sweetness if needed.
  3. Refrigerate the lemonade for at least 30 minutes to chill thoroughly. Before serving, fill glasses with ice. Pour the lemonade about two-thirds of the way, then top with sparkling water or club soda. Garnish with lemon slices and pineapple wedges, if desired.
