A quick and flavorful Spicy Chickpea and Avocado Wrap perfect for a light lunch or dinner.

- 400g / 1 ½ cups Chickpeas, canned, drained and rinsed
- 2 medium Avocados, pitted and mashed
- ½ medium Red Onion, finely diced
- 1 medium Bell Pepper, finely diced
- 1 small Jalapeño, seeded and minced
- 2 tbsp Lime Juice, freshly squeezed
- 1 tsp Chili Powder
- ½ tsp Cumin
- ½ tsp Smoked Paprika
- ¼ tsp Garlic Powder
- Salt and Pepper to taste
- 4 large Tortillas
- Optional toppings: Fresh Cilantro, Hot Sauce, Shredded Lettuce
Instructions
- In a large bowl, mash the avocado until mostly smooth. Add the chickpeas, red onion, bell pepper, jalapeño, lime juice, chili powder, cumin, smoked paprika, garlic powder, salt, and pepper. Mix well to combine.
- Warm the tortillas slightly to make them more pliable (optional).
- Divide the chickpea and avocado mixture evenly among the tortillas. Add any desired toppings such as fresh cilantro or shredded lettuce.
- Fold in the sides of each tortilla and then roll up tightly.
- Cut the wraps in half (optional). Serve immediately and enjoy!

- Spice Level: Adjust the amount of jalapeño to your spice preference.
