Ingredients

- 1 teaspoon honey
- 1/2 teaspoon Dijon mustard

Instructions
- In a large bowl, combine the spinach, diced apple, chickpeas, cranberries, and walnuts.
- In a small bowl, whisk together olive oil, lemon juice, honey, Dijon mustard, salt, and pepper.
- Pour the dressing over the salad and toss gently to coat.
- If using, sprinkle crumbled feta on top.
- Serve immediately or chill up to 2 hours before serving.
