- 1 can (15 oz) chickpeas, drained and rinsed

- 1 tsp lemon zest
- 1 clove garlic, minced
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 cup grated Parmesan cheese (optional)
Instructions
- Cook Pasta: Cook pasta per package instructions. Drain and rinse under cold water to cool.
- Combine: In a large bowl, add pasta, spinach, and chickpeas.
- Make Dressing: In a small bowl, whisk olive oil, lemon juice, zest, garlic, salt, and pepper.
- Toss: Pour dressing over the salad and toss gently to combine.
