Ingredients

- 4 ears of corn, husked
- 2 tablespoons olive oil
- Salt and pepper to taste
- 1 large cucumber, peeled, seeded, and diced
- 1/2 cup mayonnaise
- 1/4 cup sour cream
- 1/4 cup chopped fresh cilantro
- 2 tablespoons lime juice
- 1 jalapeño, seeded and minced (optional)
- 1/4 teaspoon garlic powder
- Salt and pepper to taste
Instructions
- Preheat your grill to medium-high heat. Brush the corn with olive oil and season with salt and pepper.
- Grill the corn for about 10-15 minutes, turning occasionally, until the kernels are slightly charred and cooked through. Alternatively, you can roast the corn in a preheated oven at 400°F (200°C) for about 20 minutes.
- Let the corn cool slightly, then use a knife to cut the kernels off the cob.
- While the corn is grilling, prepare the cucumber by peeling, seeding, and dicing it into small pieces.
- In a large bowl, whisk together the mayonnaise, sour cream, chopped cilantro, lime juice, minced jalapeño (if using), garlic powder, salt, and pepper.
- Add the diced cucumber and grilled corn kernels to the bowl with the creamy dressing. Gently toss to combine until everything is well coated.
- Cover the bowl and refrigerate for at least 30 minutes to allow the flavors to meld together. This step is optional but recommended.
- Before serving, give the salad a final toss. Taste and adjust the seasoning as needed. Serve cold and enjoy!
