  • 1/4 cup cornstarch
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons vegetable oil
  • 1/2 cup water
  • 1/3 cup rice vinegar
  • 1/4 cup sugar
  • 2 tablespoons soy sauce
  • 1 tablespoon cornstarch
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, minced
  • 1/2 teaspoon red pepper flakes (adjust to taste)

Instructions

  1. In a bowl, toss the chicken pieces with cornstarch, salt, and pepper until evenly coated.
  2. Heat the vegetable oil in a large skillet or wok over medium-high heat. Add the chicken in a single layer (cook in batches if necessary) and cook until browned and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.
  3. In a separate bowl, whisk together water, rice vinegar, sugar, soy sauce, and cornstarch until smooth.
  4. Add the minced garlic and ginger to the skillet and cook for about 30 seconds until fragrant. Pour in the sweet chili sauce mixture and bring to a simmer, stirring constantly until the sauce thickens, about 2-3 minutes.
  5. Return the cooked chicken to the skillet and toss to coat evenly with the sweet chili sauce.
  6. Serve the sweet chili chicken hot over rice or noodles. Garnish with sesame seeds and chopped green onions, if desired.
