- 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch pieces
- 1/4 cup cornstarch
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons vegetable oil
- 1/2 cup water
- 1/3 cup rice vinegar
- 1/4 cup sugar
- 2 tablespoons soy sauce
- 1 tablespoon cornstarch
- 2 cloves garlic, minced
- 1 teaspoon ginger, minced
- 1/2 teaspoon red pepper flakes (adjust to taste)
Instructions
- In a bowl, toss the chicken pieces with cornstarch, salt, and pepper until evenly coated.
- Heat the vegetable oil in a large skillet or wok over medium-high heat. Add the chicken in a single layer (cook in batches if necessary) and cook until browned and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.
- In a separate bowl, whisk together water, rice vinegar, sugar, soy sauce, and cornstarch until smooth.
- Add the minced garlic and ginger to the skillet and cook for about 30 seconds until fragrant. Pour in the sweet chili sauce mixture and bring to a simmer, stirring constantly until the sauce thickens, about 2-3 minutes.
- Return the cooked chicken to the skillet and toss to coat evenly with the sweet chili sauce.
- Serve the sweet chili chicken hot over rice or noodles. Garnish with sesame seeds and chopped green onions, if desired.
