Ingredients

  • 2 ears sweet corn, kernels removed (250g / 1 cup)
  • 1 can chickpeas (15 oz / 425g), drained and rinsed
  • 2 ripe avocados, diced
  • 1/4 cup red onion, finely chopped (30g)
  • 1/2 bell pepper, diced (75g)
  • 1/4 cup fresh cilantro, chopped (15g)
  • 2 tablespoons lime juice (30ml)
  • 3 tablespoons olive oil (45ml)
  • 1/2 teaspoon cumin (2.5ml)
  • 1/4 teaspoon chili powder (1.25ml)
  • Salt and pepper to taste

Instructions

  1. If using fresh corn, remove kernels from the cob.
  2. In a large mixing bowl, combine corn, chickpeas, avocado, red onion, bell pepper, and cilantro.
  3. In a small bowl, whisk together lime juice, olive oil, cumin, chili powder, salt, and pepper.
  4. Pour dressing over the salad and gently toss to coat.
  5. Taste and adjust seasonings. Serve immediately or chill.
