- 2 ears sweet corn, kernels removed (250g / 1 cup)
- 1 can chickpeas (15 oz / 425g), drained and rinsed
- 2 ripe avocados, diced
- 1/4 cup red onion, finely chopped (30g)
- 1/2 bell pepper, diced (75g)
- 1/4 cup fresh cilantro, chopped (15g)
- 2 tablespoons lime juice (30ml)
- 3 tablespoons olive oil (45ml)
- 1/2 teaspoon cumin (2.5ml)
- 1/4 teaspoon chili powder (1.25ml)
- Salt and pepper to taste
Instructions
- If using fresh corn, remove kernels from the cob.
- In a large mixing bowl, combine corn, chickpeas, avocado, red onion, bell pepper, and cilantro.
- In a small bowl, whisk together lime juice, olive oil, cumin, chili powder, salt, and pepper.
- Pour dressing over the salad and gently toss to coat.
- Taste and adjust seasonings. Serve immediately or chill.
