- 6 cups mixed greens (romaine and spinach)
- 2 cups fresh strawberries, hulled and sliced
- 1/2 cup crumbled feta cheese
- 1/4 cup sliced almonds, toasted
- 1/4 cup red onion, thinly sliced
- 1/4 cup crispy chickpeas (canned chickpeas roasted with olive oil and salt)
For the dressing:
- 1/4 cup olive oil
- 2 tablespoons balsamic vinegar
- 1 tablespoon honey
- 1 teaspoon Dijon mustard
- Salt and pepper to taste
For the crunch topping:
- 1/2 cup granola (without honey if preferred)
- 2 tablespoons sunflower seeds
Instructions
- Preheat oven to 400°F (200°C).
- Prepare crispy chickpeas by draining, rinsing, and drying. Toss with olive oil and salt, roast for 20-25 minutes until crispy. Cool completely.
- Make the dressing by whisking together olive oil, balsamic vinegar, honey, Dijon mustard, salt, and pepper in a small bowl. Set aside.
- Toast almonds in a dry skillet over medium heat for 3-4 minutes until fragrant and lightly browned. Remove from heat and let cool.
- Assemble the salad by placing mixed greens in a large bowl. Arrange sliced strawberries, red onion, and crumbled feta cheese over the greens.
- Sprinkle toasted almonds, crispy chickpeas, granola, and sunflower seeds over the salad.
- Drizzle dressing over the salad just before serving and toss gently. Serve immediately.
