For the Crust:

  • 1 1/4 cups (156g) all-purpose flour
  • 1/2 teaspoon (2.5g) salt
  • 1/2 cup (113g) unsalted butter, cold and cubed
  • 1/4 cup (60g) vegetable shortening, cold
  • 1/4 cup (60ml) ice water

For the Filling:

  • 1 cup (200g) granulated sugar
  • 1 cup (320g) light corn syrup
  • 1/2 cup (113g) unsalted butter, melted
  • 3 large eggs
  • 1 teaspoon (5ml) vanilla extract
  • 1/4 teaspoon (1.25g) salt
  • 1 cup (170g) semi-sweet chocolate chips
  • 2 cups (200g) pecan halves

Instructions

  1. Prepare the Crust: In a large bowl, whisk together the flour and salt. Cut in the cold butter and shortening using a pastry blender or your fingers until the mixture resembles coarse crumbs. Gradually add the ice water, mixing until the dough just comes together. Form the dough into a disc, wrap in plastic wrap, and refrigerate for at least 30 minutes.
  2. Preheat and Prepare: Preheat oven to 350°F (175°C). On a lightly floured surface, roll out the dough into a 12-inch circle. Transfer the dough to a 9-inch pie plate, trim the edges, and crimp decoratively.
  3. Make the Filling: In a large bowl, whisk together the granulated sugar, corn syrup, melted butter, eggs, vanilla extract, and salt until well combined.
  4. Assemble and Bake: Sprinkle the chocolate chips evenly over the bottom of the pie crust. Arrange the pecan halves over the chocolate chips. Pour the filling mixture over the pecans and chocolate chips. Bake for 50-60 minutes, or until the filling is set and the crust is golden brown. If the crust starts to brown too quickly, cover the edges with foil.
  5. Cool and Serve: Let the pie cool completely on a wire rack before serving.
