Ingredients

Scale

For the Chicken:

  • 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp paprika
  • 1/4 tsp black pepper
  • Salt to taste

For the Butter Sauce:

  • 1/2 cup (1 stick) unsalted butter (113g)
  • 4 cloves garlic, minced
  • 1/2 cup chicken broth (120ml)
  • 1/4 cup heavy cream (60ml)
  • 2 tbsp tomato paste (30ml)
  • 1 tbsp honey (15ml)
  • 1 tsp lemon juice (5ml)
  • 1/2 tsp red pepper flakes (optional)
  • Salt to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Prepare the Chicken: In a bowl, combine the chicken pieces with olive oil, garlic powder, onion powder, paprika, salt, and pepper. Mix well to ensure the chicken is evenly coated.
  2. Cook the Chicken: Heat a large skillet over medium-high heat. Add the seasoned chicken and cook for 6-8 minutes, or until the chicken is cooked through and lightly browned. Remove the chicken from the skillet and set aside.
  3. Make the Butter Sauce: In the same skillet, melt the butter over medium heat. Add the minced garlic and cook for about 1 minute, or until fragrant. Be careful not to burn the garlic.
  4. Add Liquids: Pour in the chicken broth, heavy cream, and tomato paste. Stir well to combine. Add the honey, lemon juice, and red pepper flakes (if using). Season with salt to taste.
  5. Simmer the Sauce: Bring the sauce to a simmer and let it cook for 5-7 minutes, stirring occasionally, until the sauce has thickened slightly.
  6. Combine Chicken and Sauce: Add the cooked chicken back into the skillet with the butter sauce. Stir gently to coat the chicken evenly with the sauce.
  7. Finish and Serve: Let the chicken simmer in the sauce for another 2-3 minutes, allowing the flavors to meld together. Garnish with fresh parsley.
  8. Serve Hot: Serve hot with rice, mashed potatoes, or your favorite side dish.

Notes

  • Tip: Marinate chicken for at least 15 minutes for enhanced flavor.
  • Variation: Add cumin for an earthy kick.
