- 1/4 cup chopped fresh cilantro

- 1/4 cup chopped roasted peanuts
- 2 green onions, thinly sliced
- 3 tablespoons lime juice
- 2 tablespoons fish sauce
- 1 tablespoon honey
- 1 tablespoon vegetable oil
- 1 teaspoon grated fresh ginger
- 1 small red chili, finely minced (or 1/2 teaspoon chili flakes)
- 1 garlic clove, minced
Instructions
- In a large bowl, combine the shredded cabbage, carrots, red bell pepper, cilantro, mint, and green onions.
- Add the shredded chicken to the vegetable mixture and toss gently to combine.
- In a small bowl, whisk together lime juice, fish sauce, honey, vegetable oil, grated ginger, minced chili, and garlic until well combined.
- Pour the dressing over the salad and toss thoroughly to coat all ingredients evenly.
- Let the salad sit for 5-10 minutes to allow the flavors to meld together.
- Just before serving, sprinkle with chopped roasted peanuts.
- Serve immediately, garnished with extra cilantro leaves if desired.
