Ingredients

- 2 cups shredded cooked chicken breast
- 4 cups shredded cabbage (green and purple mix)
- 1 cup shredded carrots
- 1/2 cup chopped red bell pepper
- 1/4 cup chopped green onions
- 1/4 cup chopped cilantro
- 1/2 cup roasted peanuts
- 1/2 cup crispy chow mein noodles
- For the Dressing:
- 1/4 cup creamy peanut butter
- 2 tablespoons soy sauce
- 1 tablespoon honey
- 1 tablespoon lime juice
- 1 teaspoon sesame oil
- 1 teaspoon grated fresh ginger
- 1 clove garlic, minced
- 2–3 tablespoons water (to thin dressing)
Instructions
- In a large mixing bowl, combine the shredded cabbage, carrots, red bell pepper, green onions, and cilantro. Toss gently to mix.
- Add the shredded chicken to the vegetable mixture and toss to distribute evenly.
- In a separate small bowl, whisk together the peanut butter, soy sauce, honey, lime juice, sesame oil, grated ginger, and minced garlic until smooth.
- Gradually add water, one tablespoon at a time, while whisking until the dressing reaches your desired consistency.
- Pour the dressing over the salad mixture and toss thoroughly until everything is well coated.
- Cover the bowl and refrigerate for at least 30 minutes to allow the flavors to meld together.
- Just before serving, add the roasted peanuts and crispy chow mein noodles, tossing gently to combine.
- Taste and adjust seasoning if needed, adding more lime juice or soy sauce as desired.
- Serve chilled, garnished with extra peanuts and cilantro if desired.
