Ingredients

  • 4 cups shredded cabbage (green and purple mix)
  • 1 cup shredded carrots
  • 1/2 cup chopped red bell pepper
  • 1/4 cup chopped green onions
  • 1/4 cup chopped cilantro
  • 1/2 cup roasted peanuts
  • 1/2 cup crispy chow mein noodles
  • For the Dressing:
    • 1/4 cup creamy peanut butter
    • 2 tablespoons soy sauce
    • 1 tablespoon honey
    • 1 tablespoon lime juice
    • 1 teaspoon sesame oil
    • 1 teaspoon grated fresh ginger
    • 1 clove garlic, minced
    • 23 tablespoons water (to thin dressing)

Instructions

  1. In a large mixing bowl, combine the shredded cabbage, carrots, red bell pepper, green onions, and cilantro. Toss gently to mix.
  2. Add the shredded chicken to the vegetable mixture and toss to distribute evenly.
  3. In a separate small bowl, whisk together the peanut butter, soy sauce, honey, lime juice, sesame oil, grated ginger, and minced garlic until smooth.
  4. Gradually add water, one tablespoon at a time, while whisking until the dressing reaches your desired consistency.
  5. Pour the dressing over the salad mixture and toss thoroughly until everything is well coated.
  6. Cover the bowl and refrigerate for at least 30 minutes to allow the flavors to meld together.
  7. Just before serving, add the roasted peanuts and crispy chow mein noodles, tossing gently to combine.
  8. Taste and adjust seasoning if needed, adding more lime juice or soy sauce as desired.
  9. Serve chilled, garnished with extra peanuts and cilantro if desired.
