- 1 lb boneless, skinless chicken breasts, sliced into thin strips
- 2 tbsp soy sauce
- 1 tbsp lime juice
- 1 tsp grated ginger
- 1 clove garlic, minced
- Peanut Sauce: 1/4 cup creamy peanut butter, 2 tbsp soy sauce, 1 tbsp honey, 1 tbsp lime juice, 1 tsp sesame oil, 2–3 tbsp water (to thin)
- 4 large flour tortillas or lettuce wraps
- 1 cup shredded carrots
- 1 cup shredded purple cabbage
- 1/4 cup chopped cilantro
- 1/4 cup chopped peanuts
- Lime wedges for serving
Instructions
- In a medium bowl, combine chicken strips with 2 tbsp soy sauce, 1 tbsp lime juice, grated ginger, and minced garlic. Let marinate for 15 minutes.
- While chicken marinates, prepare the peanut sauce by whisking together peanut butter, 2 tbsp soy sauce, honey, 1 tbsp lime juice, and sesame oil in a small bowl. Add water gradually until desired consistency is reached.
- Heat a large skillet over medium-high heat. Add marinated chicken and cook for 5–7 minutes, stirring occasionally, until fully cooked through and slightly browned.
- Warm tortillas briefly in a dry skillet or microwave for easier wrapping.
- To assemble wraps, spread 2 tablespoons of peanut sauce down the center of each tortilla.
- Top with cooked chicken, shredded carrots, shredded cabbage, and chopped cilantro.
- Sprinkle with chopped peanuts and drizzle with additional peanut sauce if desired.
- Fold the sides of the tortilla inward, then roll tightly from the bottom to form a wrap.
- Serve immediately with lime wedges on the side.
