Ingredients

  • 1 lb boneless, skinless chicken breasts, sliced into thin strips
  • 2 tbsp soy sauce
  • 1 tbsp lime juice
  • 1 tsp grated ginger
  • 1 clove garlic, minced
  • Peanut Sauce: 1/4 cup creamy peanut butter, 2 tbsp soy sauce, 1 tbsp honey, 1 tbsp lime juice, 1 tsp sesame oil, 2–3 tbsp water (to thin)
  • 4 large flour tortillas or lettuce wraps
  • 1 cup shredded carrots
  • 1 cup shredded purple cabbage
  • 1/4 cup chopped cilantro
  • 1/4 cup chopped peanuts
  • Lime wedges for serving

Instructions

  1. In a medium bowl, combine chicken strips with 2 tbsp soy sauce, 1 tbsp lime juice, grated ginger, and minced garlic. Let marinate for 15 minutes.
  2. While chicken marinates, prepare the peanut sauce by whisking together peanut butter, 2 tbsp soy sauce, honey, 1 tbsp lime juice, and sesame oil in a small bowl. Add water gradually until desired consistency is reached.
  3. Heat a large skillet over medium-high heat. Add marinated chicken and cook for 5–7 minutes, stirring occasionally, until fully cooked through and slightly browned.
  4. Warm tortillas briefly in a dry skillet or microwave for easier wrapping.
  5. To assemble wraps, spread 2 tablespoons of peanut sauce down the center of each tortilla.
  6. Top with cooked chicken, shredded carrots, shredded cabbage, and chopped cilantro.
  7. Sprinkle with chopped peanuts and drizzle with additional peanut sauce if desired.
  8. Fold the sides of the tortilla inward, then roll tightly from the bottom to form a wrap.
  9. Serve immediately with lime wedges on the side.
