  • Diet: Vegetarian

Description

Golden brown, perfectly salted, and brushed with melted butter, these pretzel bites are perfect for any occasion!

Ingredients

Scale
  • 1 1/2 cups (360ml) warm water (105-115°F)
  • 1 tablespoon (12g) granulated sugar
  • 2 1/4 teaspoons (7g) active dry yeast (1 packet)
  • 4 1/2 cups (540g) all-purpose flour, plus more for dusting
  • 2 tablespoons (28g) unsalted butter, melted
  • 1 1/2 teaspoons (9g) salt
  • 10 cups (2.4L) water
  • 1/2 cup (96g) baking soda
  • 1/2 cup (113g) unsalted butter, melted
  • Coarse sea salt, for sprinkling

Instructions

  1. In the bowl of a stand mixer, combine warm water, sugar, and yeast. Let stand for 5 minutes, until foamy.
  2. Add flour, melted butter, and salt to the yeast mixture. Mix with the dough hook attachment on low speed until a dough forms. Increase speed to medium and knead for 5-7 minutes until the dough is smooth and elastic. If the dough is too sticky, add more flour, 1 tablespoon at a time.
  3. Place the dough in a lightly oiled bowl, turning to coat. Cover with plastic wrap and let rise in a warm place for 1 hour, or until doubled in size.
  4. Preheat oven to 425°F (220°C). Line two baking sheets with parchment paper.
  5. Punch down the dough and divide it in half. Roll each half into a long rope, about 24 inches long. Cut the ropes into 1-inch pieces.
  6. In a large pot, bring 10 cups of water and baking soda to a boil. Gently drop the pretzel bites into the boiling water, about 10-12 at a time. Boil for 30 seconds, then remove with a slotted spoon and place on the prepared baking sheets.
  7. Brush the pretzel bites with melted butter and sprinkle with coarse sea salt.
  8. Bake for 12-15 minutes, or until golden brown.
  9. Let the pretzel bites cool slightly before serving. Serve warm with your favorite dipping sauces.

Notes

  • Yeast Temperature: Ensure water is between 105-115°F for optimal yeast activation.
  • Kneading: Dough should be smooth and elastic after kneading.
  • Boiling: Baking soda bath is crucial for pretzel flavor and texture.
