  • 1 tablespoon (15ml) vegetable oil
  • 1 large onion, chopped (about 2 cups / 300g)
  • 4 cloves garlic, minced (about 2 tablespoons / 30g)
  • 1 pound (450g) ground beef
  • 2 tablespoons (30g) chili powder
  • 1 teaspoon (5g) ground cumin
  • 1 teaspoon (5g) dried oregano
  • 1 can (15 ounces / 425g) diced tomatoes
  • 1 can (15 ounces / 425g) kidney beans, drained and rinsed
  • 1 cup (240ml) beef broth
  • Salt and pepper to taste

Instructions

  1. Heat vegetable oil in a large pot over medium heat. Add chopped onion and minced garlic, cooking until softened, about 5 minutes.
  2. Add ground beef to the pot, breaking it up with a spoon, and cook until browned, about 8-10 minutes.
  3. Stir in chili powder, ground cumin, and dried oregano, cooking for 1 minute until fragrant.
  4. Add diced tomatoes, kidney beans, and beef broth to the pot. Bring to a simmer.
  5. Reduce heat to low, cover, and let the chili simmer for 30 minutes, stirring occasionally.
  6. Season with salt and pepper to taste. Serve hot.

Notes

  • Make it Thicker: If you prefer a thicker chili, simmer uncovered for an extra 10-15 minutes, or mash some of the kidney beans against the side of the pot.
