- 1/2 cup (113g) unsalted butter, softened
- 1 cup (200g) granulated sugar
- 2 large eggs
- 1 teaspoon (5ml) vanilla extract
- 1/2 cup (100g) powdered sugar for rolling
Instructions
- Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
- In a medium bowl, whisk together flour, cocoa powder, baking powder, and salt.
- In a large bowl, cream butter and granulated sugar until light and fluffy. Beat in eggs one at a time, then stir in vanilla.
- Gradually mix dry ingredients into wet ingredients until just combined.
- Cover dough and chill in refrigerator for at least 2 hours.
- Place powdered sugar in a shallow bowl. Scoop dough into 1-inch balls, roll in powdered sugar to coat heavily.
- Place balls 2 inches apart on prepared baking sheets. Bake for 10-12 minutes until edges are set and tops are cracked.
- Cool on baking sheets for 5 minutes, then transfer to wire racks to cool completely.
