Ingredients

- 6 cups mixed salad greens
- 1 cup cherry tomatoes, halved
- 1/2 cup cucumber, sliced
- 1/4 cup red onion, thinly sliced
- 1/2 cup carrot, shredded
- 1/4 cup bell pepper, chopped
- 1/4 cup crumbled feta cheese (optional)
For the Vinaigrette Dressing:
- 1/4 cup olive oil
- 2 tablespoons apple cider vinegar
- 1 tablespoon lemon juice
- 1 teaspoon Dijon mustard
- 1 clove garlic, minced
- 1/2 teaspoon dried oregano
- Salt and pepper to taste
Instructions
- Prepare the Salad: In a large bowl, combine the mixed salad greens, cherry tomatoes, cucumber, red onion, carrot, and bell pepper. If using, add the feta cheese.
- Make the Vinaigrette: In a small bowl, whisk together the olive oil, apple cider vinegar, lemon juice, Dijon mustard, minced garlic, and dried oregano. Season with salt and pepper to taste.
- Dress the Salad: Pour the vinaigrette over the salad and toss gently to combine. Be careful not to overdress the salad; you may not need all of the vinaigrette.
- Serve: Serve the salad immediately. Enjoy!
