  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 1/2 cups (170g) chopped pecans

Instructions

  1. Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper or silicone baking mats.
  2. In a large bowl, using an electric mixer, cream together the softened butter, granulated sugar, and light brown sugar until light and fluffy, about 2-3 minutes.
  3. Beat in the egg and vanilla extract until well combined, scraping down the sides of the bowl as needed.
  4. In a separate medium bowl, whisk together the all-purpose flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined. Be careful not to overmix.
  6. Fold in the chopped pecans until evenly distributed throughout the dough.
  7. Drop rounded tablespoons of dough onto the prepared baking sheets, spacing them about 2 inches apart. A cookie scoop works well for uniform cookies.
