- 2 tablespoons olive oil
- 1 large onion, chopped
- 2 cloves garlic, minced
- 5 cups vegetable broth
- 1.5 pounds potatoes, peeled and cubed
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 cup milk
- 1/4 cup sour cream (optional)
- 2 tablespoons chopped fresh chives, for garnish
Instructions
- Heat olive oil in a large pot or Dutch oven over medium heat.
- Add chopped onion and cook until softened, about 5 minutes. Add minced garlic and cook for another minute until fragrant.
- Pour in vegetable broth and add cubed potatoes, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 15-20 minutes, or until potatoes are very tender.
- Carefully transfer the soup to a blender (or use an immersion blender) and blend until smooth and creamy.
- Return the soup to the pot and stir in milk. Heat through, but do not boil.
- If desired, stir in sour cream for extra richness.
- Serve hot, garnished with fresh chives.
