Description

Ingredients

  • 1 cup (200g) granulated sugar
  • 1/2 cup (100g) brown sugar, packed
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 3/4 cup (170g) pumpkin puree
  • 2 1/4 cups (281g) all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon salt
  • 1 cup chocolate chips or raisins (optional)

For the glaze (optional):

  • 1 cup (120g) powdered sugar
  • 2 tablespoons milk
  • 1/2 teaspoon vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. Cream together the softened butter, granulated sugar, and brown sugar until light and fluffy, about 2-3 minutes.
  3. Beat in the egg, then add vanilla extract and pumpkin puree, mixing until smooth.
  4. In a separate bowl, whisk together flour, baking powder, cinnamon, nutmeg, ginger, and salt.
  5. Gradually add dry ingredients to wet ingredients, mixing until just combined. Do not overmix.
  6. Fold in chocolate chips or raisins if using.
  7. Drop rounded tablespoons of dough onto prepared baking sheets, spacing about 2 inches apart.
  8. Bake 12-15 minutes, until edges are lightly golden and centers look set.
  9. Cool on baking sheet for 5 minutes, then transfer to wire rack to cool completely.
  10. For optional glaze: whisk together powdered sugar, milk, and vanilla extract. Drizzle over cooled cookies and allow to set before serving.
