Ingredients

  • 2 cucumbers, thinly sliced
  • 1/4 cup rice vinegar
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon sugar
  • 1 teaspoon gochugaru (Korean chili flakes)
  • 1 clove garlic, minced
  • 1/2 teaspoon ginger, grated
  • 1 green onion, thinly sliced
  • 1 tablespoon sesame seeds

Instructions

  1. Thinly slice the cucumbers.
  2. In a medium bowl, whisk together the rice vinegar, soy sauce, sesame oil, sugar, gochugaru, garlic, and ginger.
  3. Add the sliced cucumbers and green onion to the bowl with the dressing.
  4. Toss everything together until the cucumbers are well coated.
