Description

A heartwarming and traditional Turkish Cabbage Stew (Lahana Yemeği) featuring tender cabbage, savory ground beef, and aromatic spices simmered in a rich tomato broth. An easy, comforting one-pot meal perfect for any day of the week.


Ingredients

2 tablespoons (30ml) olive oil
1 large (approx. 200g) onion, finely chopped
500g (1 lb) lean ground beef
2 tablespoons (30g) tomato paste
1 teaspoon ground paprika
1 teaspoon ground cumin
1/2 teaspoon dried mint
1/2 teaspoon red pepper flakes (or to taste)
Salt and black pepper, to taste
1 medium head (approx. 1.5 kg / 3 lbs) green cabbage, cored and chopped into large pieces
2 medium (approx. 150g) carrots, peeled and sliced
2 medium (approx. 300g) potatoes, peeled and cubed
4 cups (1 liter) beef broth
1/4 cup (10g) fresh parsley, chopped, for garnish


Instructions

Heat olive oil in a large Dutch oven or heavy-bottomed pot over medium heat. Add chopped onions and sauté until fragrant and soft, about 5 minutes. Add ground beef, crumbling and sautéing until thoroughly browned.
Stir in the tomato paste and cook for 1 minute. Add ground paprika, cumin, dried mint, red pepper flakes, salt, and black pepper. Stir for another minute, allowing spices to bloom.
Add chopped cabbage, sliced carrots, and cubed potatoes to the pot. Pour in the beef broth. Bring to a gentle simmer, then cover and reduce heat to low. Simmer for 15 to 20 minutes, or until the vegetables are tender to your liking.
Ladle the hot Turkish Cabbage Stew into bowls. Garnish generously with fresh chopped parsley and serve immediately.

Notes

For extra flavor, briefly toast the tomato paste and spices before adding the liquids.
Adjust the amount of red pepper flakes to suit your preferred level of spice.
The stew can be prepared ahead of time as flavors deepen overnight.
Store leftovers in an airtight container in the refrigerator for up to 3-4 days or freeze for up to 3 months.
