  • 2 carrots (200g), diced
  • 2 celery stalks (150g), diced
  • 3 cloves garlic (15g), minced
  • 1 can (400g) crushed tomatoes
  • 1 cup (240ml) vegetable broth
  • 2 tablespoons (30g) tomato paste
  • 1 teaspoon (5g) dried oregano
  • 1 teaspoon (5g) dried basil
  • Salt and pepper to taste

Instructions

  1. Prepare the Lentils: Rinse lentils and cook according to package instructions until tender but firm. Set aside.
  2. Build the Flavor Base: Heat olive oil in a large pot over medium heat. Sauté onion, carrots, and celery for 5-7 minutes until softened. Add garlic and cook for 1 minute more.
  3. Simmer the Sauce: Stir in crushed tomatoes, vegetable broth, tomato paste, oregano, and basil. Bring to a gentle simmer.
  4. Combine and Thicken: Add the cooked lentils to the pot. Season with salt and pepper. Cover and simmer on low for 20-25 minutes, stirring occasionally until the sauce deepens in flavor and thickens.
