Ingredients

  • 1 kg / 2.2 lbs Potatoes (Russet or Yukon Gold)
  • 56g / ¼ cup Butter, unsalted
  • 240ml / 1 cup Vegetable Broth
  • 2 cloves Garlic, minced
  • 2 sprigs Thyme, fresh (or 1 tsp dried)
  • Salt to taste
  • Black Pepper to taste
  • Olive Oil for greasing

Instructions

  • Step 1: Preheat oven to 375°F (190°C). Grease an 8×8-inch baking dish with olive oil and line with parchment paper.
  • Step 2: Thinly slice potatoes using a mandoline or sharp knife.
  • Step 3: Melt butter in a saucepan over medium heat. Add garlic and thyme; cook until fragrant. Stir in vegetable broth, salt, and pepper; let simmer.
  • Step 4: Arrange a layer of potato slices in the dish, overlapping slightly. Drizzle with the butter-broth mixture. Repeat layering until all potatoes and broth are used.
  • Step 5: Cover with foil and bake for 45 minutes. Uncover and bake for another 15 minutes or until the top is golden and crisp.
  • Step 6: Let cool slightly. Lift out using parchment paper. Cut into fries or squares and serve immediately.
