- 1 kg / 2.2 lbs Potatoes (Russet or Yukon Gold)
- 56g / ¼ cup Butter, unsalted
- 240ml / 1 cup Vegetable Broth
- 2 cloves Garlic, minced
- 2 sprigs Thyme, fresh (or 1 tsp dried)
- Salt to taste
- Black Pepper to taste
- Olive Oil for greasing
Instructions
- Step 1: Preheat oven to 375°F (190°C). Grease an 8×8-inch baking dish with olive oil and line with parchment paper.
- Step 2: Thinly slice potatoes using a mandoline or sharp knife.
- Step 3: Melt butter in a saucepan over medium heat. Add garlic and thyme; cook until fragrant. Stir in vegetable broth, salt, and pepper; let simmer.
- Step 4: Arrange a layer of potato slices in the dish, overlapping slightly. Drizzle with the butter-broth mixture. Repeat layering until all potatoes and broth are used.
- Step 5: Cover with foil and bake for 45 minutes. Uncover and bake for another 15 minutes or until the top is golden and crisp.
- Step 6: Let cool slightly. Lift out using parchment paper. Cut into fries or squares and serve immediately.
