A hearty and comforting Warm Chickpea and Lentil Salad that’s packed with flavor and nutrients. Perfect for a light lunch or a satisfying dinner!


Ingredients

  • 1/2 cup dried lentils
  • 1 cup cooked chickpeas
  • 2 medium carrots, sliced
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • 1 tsp cumin
  • 1/2 tsp paprika
  • Salt and pepper to taste
  • 1 tbsp lemon juice
  • Fresh parsley for garnish

Instructions

  1. Cook Lentils: Rinse lentils and cook in boiling water for 20 minutes until tender. Drain and set aside.
  2. Sauté Veggies: Heat olive oil in a pan. Sauté onions for 3 minutes until translucent.
  3. Add Aromatics: Add garlic, carrots, cumin, and paprika. Cook for 5 minutes until carrots soften.
  4. Combine: Stir in chickpeas and lentils. Heat for 3–4 minutes.
  5. Season: Add salt, pepper, and lemon juice. Toss well.
  6. Finish: Garnish with fresh parsley and serve warm or at room temperature.
