A hearty and comforting Warm Chickpea and Lentil Salad that’s packed with flavor and nutrients. Perfect for a light lunch or a satisfying dinner!
Ingredients

- 1/2 cup dried lentils
- 1 cup cooked chickpeas
- 2 medium carrots, sliced
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 tbsp olive oil
- 1 tsp cumin
- 1/2 tsp paprika
- Salt and pepper to taste
- 1 tbsp lemon juice
- Fresh parsley for garnish
Instructions
- Cook Lentils: Rinse lentils and cook in boiling water for 20 minutes until tender. Drain and set aside.
- Sauté Veggies: Heat olive oil in a pan. Sauté onions for 3 minutes until translucent.
- Add Aromatics: Add garlic, carrots, cumin, and paprika. Cook for 5 minutes until carrots soften.
- Combine: Stir in chickpeas and lentils. Heat for 3–4 minutes.
- Season: Add salt, pepper, and lemon juice. Toss well.
- Finish: Garnish with fresh parsley and serve warm or at room temperature.
