  • 1 large egg
  • 2 teaspoons (10ml) vanilla extract
  • 1/4 cup (60ml) maple syrup
  • 2 teaspoons (4g) ground cinnamon
  • 8 ounces (225g) white chocolate, chopped
  • 1 tablespoon (15ml) vegetable oil

Instructions

  1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. In a medium bowl, whisk together flour, baking soda, salt, and cinnamon.
  3. In a large bowl, beat butter, granulated sugar, and brown sugar until creamy.
  4. Add egg, vanilla extract, and maple syrup. Beat until well combined.
  5. Gradually add flour mixture to wet ingredients, mixing until just combined.
  6. Drop rounded tablespoons of dough onto prepared baking sheets, spacing 2 inches apart.
  7. Bake for 10-12 minutes until edges are lightly golden. Cool on baking sheets for 5 minutes, then transfer to wire racks to cool completely.
  8. Melt white chocolate with vegetable oil in a double boiler or microwave, stirring until smooth.
  9. Dip half of each cooled cookie into melted white chocolate. Place on parchment paper to set.
