Ingredients

  • 4 cups chopped kale (200g)
  • 1 cup chopped Brussels sprouts (150g)
  • 1 cup chopped red cabbage (100g)
  • 1 orange, peeled and segmented
  • 1/2 cup pomegranate seeds (85g)
  • 1/4 cup chopped pecans (30g)
  • 1/4 cup crumbled goat cheese (30g, optional)
  • 1/4 cup white balsamic vinegar (60ml)
  • 1/4 cup olive oil (60ml)
  • 1 tablespoon honey (20ml)
  • 1 teaspoon Dijon mustard (5ml)
  • 1 clove garlic, minced
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine chopped kale, Brussels sprouts, and red cabbage. Massage the kale gently.
  2. Add orange segments, pomegranate seeds, and chopped pecans.
  3. In a small bowl, whisk together white balsamic vinegar, olive oil, honey, Dijon mustard, and minced garlic.
  4. Season the dressing with salt and pepper to taste. Adjust sweetness/tanginess as needed.
  5. Pour the dressing over the salad and toss well to combine.
  6. If desired, sprinkle crumbled goat cheese over the salad.
  7. Serve immediately or chill. Best served within a few hours of dressing.
