Ingredients

- 4 cups chopped kale (200g)
- 1 cup chopped Brussels sprouts (150g)
- 1 cup chopped red cabbage (100g)
- 1 orange, peeled and segmented
- 1/2 cup pomegranate seeds (85g)
- 1/4 cup chopped pecans (30g)
- 1/4 cup crumbled goat cheese (30g, optional)
- 1/4 cup white balsamic vinegar (60ml)
- 1/4 cup olive oil (60ml)
- 1 tablespoon honey (20ml)
- 1 teaspoon Dijon mustard (5ml)
- 1 clove garlic, minced
- Salt and pepper to taste
Instructions
- In a large bowl, combine chopped kale, Brussels sprouts, and red cabbage. Massage the kale gently.
- Add orange segments, pomegranate seeds, and chopped pecans.
- In a small bowl, whisk together white balsamic vinegar, olive oil, honey, Dijon mustard, and minced garlic.
- Season the dressing with salt and pepper to taste. Adjust sweetness/tanginess as needed.
- Pour the dressing over the salad and toss well to combine.
- If desired, sprinkle crumbled goat cheese over the salad.
- Serve immediately or chill. Best served within a few hours of dressing.
