Ingredients

- 2 medium zucchinis, sliced into half-moons
- 1 can (15 oz) chickpeas, drained and rinsed
- 4 cloves garlic, minced
- 1 tablespoon olive oil
- 1 teaspoon cumin
- ½ teaspoon paprika
- ¼ teaspoon black pepper
- ½ teaspoon salt
- 1 tablespoon lemon juice
- 2 tablespoons fresh parsley, chopped
Instructions
- Prepare all ingredients: slice zucchinis, mince garlic, drain and rinse chickpeas, and chop parsley.
- Heat olive oil in a large skillet over medium-high heat.
- Add garlic and sauté for 30 seconds until fragrant.
- Add zucchini and stir-fry for 3-4 minutes until softened.
- Add chickpeas and stir-fry for 2-3 minutes until heated through.
- Sprinkle cumin, paprika, black pepper, and salt over the mixture and stir well.
- Cook for 2 minutes, allowing spices to toast.
- Remove from heat and drizzle with lemon juice, tossing to combine.
- Garnish with parsley before serving.
- Serve immediately as a main dish or side.
