Zucchini, Chickpea, and Tomato Bake with Mozzarella

Description

A Mediterranean-inspired bake with zucchini, chickpeas, tomatoes, and mozzarella.


Ingredients

  • 2 medium zucchinis, sliced
  • 1 can (15 oz) chickpeas, drained and rinsed
  • 2 cups cherry tomatoes, halved
  • 1 cup shredded mozzarella cheese
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp dried oregano
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup fresh basil, chopped

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large mixing bowl, combine the sliced zucchinis, chickpeas, and cherry tomatoes.
  3. Drizzle the olive oil over the vegetables and sprinkle with garlic powder, oregano, salt, and black pepper. Toss to coat evenly.
  4. Transfer the mixture to a baking dish and spread it out evenly.
  5. Bake in the preheated oven for 25 minutes.
  6. Remove the dish from the oven and sprinkle the shredded mozzarella cheese evenly over the top.
  7. Return the dish to the oven and bake for another 10 minutes, or until the cheese is melted and bubbly.
  8. Remove from the oven and let it cool for 5 minutes.
  9. Garnish with fresh basil before serving.
