A Mediterranean-inspired bake with zucchini, chickpeas, tomatoes, and mozzarella.
Ingredients

- 2 medium zucchinis, sliced
- 1 can (15 oz) chickpeas, drained and rinsed
- 2 cups cherry tomatoes, halved
- 1 cup shredded mozzarella cheese
- 2 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp dried oregano
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 cup fresh basil, chopped
Instructions
- Preheat the oven to 375°F (190°C).
- In a large mixing bowl, combine the sliced zucchinis, chickpeas, and cherry tomatoes.
- Drizzle the olive oil over the vegetables and sprinkle with garlic powder, oregano, salt, and black pepper. Toss to coat evenly.
- Transfer the mixture to a baking dish and spread it out evenly.
- Bake in the preheated oven for 25 minutes.
- Remove the dish from the oven and sprinkle the shredded mozzarella cheese evenly over the top.
- Return the dish to the oven and bake for another 10 minutes, or until the cheese is melted and bubbly.
- Remove from the oven and let it cool for 5 minutes.
- Garnish with fresh basil before serving.
