Ingredients

  • 1/2 cup dried green lentils
  • 1 cup diced zucchini
  • 2 tbsp olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 carrot, diced
  • 1 celery stalk, diced
  • 4 cups vegetable broth
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Rinse the lentils under cold water and drain them.
  2. Heat olive oil in a large pot over medium heat. Add the onion and sauté until translucent, about 3 minutes.
  3. Add the garlic, carrot, and celery. Cook for another 5 minutes, stirring occasionally.
  4. Stir in the zucchini and cook for 2 minutes.
  5. Add the lentils, vegetable broth, thyme, and oregano. Bring to a boil.
  6. Reduce heat to low, cover, and simmer for 25–30 minutes until lentils are tender.
  7. Season with salt and pepper to taste.
  8. Serve hot, garnished with fresh parsley.
