- 400g / 1 1/2 cups chickpeas, drained and rinsed
- 2 medium avocados, diced
- 250g / 1 pint cherry tomatoes, halved
- 1/4 medium red onion, finely diced
- 1/4 cup fresh cilantro, chopped
- 2 tablespoons fresh lime juice
- 2 tablespoons olive oil
- 1/2 teaspoon cumin powder
- Salt and black pepper to taste
Instructions
- In a large bowl, combine the chickpeas, cherry tomatoes, red onion, and cilantro.
- In a separate small bowl, whisk together the lime juice, olive oil, cumin powder, salt, and black pepper.
- Pour the dressing over the chickpea and tomato mixture. Gently toss to combine.
- Gently fold in the diced avocado.
- Serve immediately or chill for later.
