Ingredients

  • 400g / 1 1/2 cups chickpeas, drained and rinsed
  • 2 medium avocados, diced
  • 250g / 1 pint cherry tomatoes, halved
  • 1/4 medium red onion, finely diced
  • 1/4 cup fresh cilantro, chopped
  • 2 tablespoons fresh lime juice
  • 2 tablespoons olive oil
  • 1/2 teaspoon cumin powder
  • Salt and black pepper to taste

Instructions

  1. In a large bowl, combine the chickpeas, cherry tomatoes, red onion, and cilantro.
  2. In a separate small bowl, whisk together the lime juice, olive oil, cumin powder, salt, and black pepper.
  3. Pour the dressing over the chickpea and tomato mixture. Gently toss to combine.
  4. Gently fold in the diced avocado.
  5. Serve immediately or chill for later.
