- 6 cups fresh baby spinach
- 1 cup mixed berries (strawberries, blueberries, raspberries)
- 1/2 cup pecans, roughly chopped
- 1/4 cup crumbled feta cheese
- 2 tbsp balsamic glaze
- 2 tbsp olive oil
- 1 tbsp honey
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
- Prepare the Base: Wash and dry the baby spinach thoroughly, then place it in a large salad bowl.
- Add the Berries: Slice the strawberries if using, and add them along with the other berries to the bowl.
- Toast the Pecans: In a small skillet over medium heat, lightly toast the pecans for 2–3 minutes until fragrant. Let them cool slightly before adding to the salad.
- Add Feta: Sprinkle the crumbled feta cheese over the salad.
- Make the Dressing: In a small bowl, whisk together the olive oil, honey, salt, and black pepper.
- Toss the Salad: Drizzle the dressing over the salad and toss gently to combine.
- Finish: Drizzle the balsamic glaze over the top just before serving.
- Serve: Serve immediately and enjoy.
