A hearty, cheesy, and utterly comforting casserole featuring tender chicken, fresh broccoli, and fluffy rice, all baked in a creamy sauce until bubbly and golden. Perfect for a family dinner or potluck!
Ingredients
2 cups (300g) cooked chicken, cubed
2 cups (250g) broccoli florets, lightly steamed
2 cups (360g) cooked white rice
1 can (10.5 oz / 298g) condensed cream of chicken soup
1/2 cup (120ml) milk
1 1/2 cups (170g) cheddar cheese, shredded
1/2 tsp (2.5g) garlic powder
1/2 cup (60g) crushed butter crackers (optional)
Instructions
Preheat oven to 350°F (175°C).
In a large bowl, mix condensed cream of chicken soup, milk, garlic powder, and half of the shredded cheddar cheese until well combined.
Stir in the cooked chicken, cooked white rice, and lightly steamed and well-drained broccoli florets.
Transfer the mixture to a greased 9×13 baking dish, spreading evenly.
Top with the remaining shredded cheddar cheese and, if using, the crushed butter cracker crumbs.
Bake for 20-25 minutes, or until the casserole is bubbly and the topping is golden brown and crisp.
Notes
Rotisserie chicken works perfectly to save prep time and adds great flavor.
Ensure broccoli is drained very well after steaming to prevent the casserole from becoming watery.
Freshly shredded cheese melts smoother than pre-shredded.
