Ingredients
1/2 cup olive oil
1 cup diced onions
2 cloves garlic, minced
1 lb cooked and shredded chicken breast
1 can (10 oz) enchilada sauce
1 can (4 oz) diced green chilies
1 cup sour cream
2 cups shredded cheddar cheese
1 cup shredded Monterey Jack cheese
6–8 small corn tortillas
1 tsp ground cumin
1 tsp chili powder
1/2 tsp salt
1/4 tsp black pepper
Instructions

Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish.

Sauté onions in olive oil in a skillet over medium heat until softened. Add garlic and cook for 1 minute.

In a large bowl, stir together the sautéed onions and garlic, shredded chicken, enchilada sauce, green chilies, sour cream, cumin, chili powder, salt, and pepper.

Assemble the first layer:

Spread a thin layer of the chicken mixture on the bottom of the greased baking dish.

Add a layer of corn tortillas (tear to fit if needed).

Spread half of the remaining chicken mixture over the tortillas.

Sprinkle half of the shredded cheddar and Monterey Jack cheeses on top.
