Ingredients

1/2 cup olive oil

1 cup diced onions

2 cloves garlic, minced

1 lb cooked and shredded chicken breast

1 can (10 oz) enchilada sauce

1 can (4 oz) diced green chilies

1 cup sour cream

2 cups shredded cheddar cheese

1 cup shredded Monterey Jack cheese

68 small corn tortillas

1 tsp ground cumin

1 tsp chili powder

1/2 tsp salt

1/4 tsp black pepper


Instructions

  1. Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish.

  2. Sauté onions in olive oil in a skillet over medium heat until softened. Add garlic and cook for 1 minute.

  3. In a large bowl, stir together the sautéed onions and garlic, shredded chicken, enchilada sauce, green chilies, sour cream, cumin, chili powder, salt, and pepper.

  4. Assemble the first layer:

    • Spread a thin layer of the chicken mixture on the bottom of the greased baking dish.

    • Add a layer of corn tortillas (tear to fit if needed).

    • Spread half of the remaining chicken mixture over the tortillas.

    • Sprinkle half of the shredded cheddar and Monterey Jack cheeses on top.

  5. Repeat the layers:

    • Add another layer of tortillas.

    • Spread the remaining chicken mixture.

    • Top with the remaining cheeses.

  6. Bake:

    • Cover the dish with aluminum foil and bake for 20 minutes.

    • Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden.

  7. Cool slightly before serving.

Notes

For a spicier casserole, use hot enchilada sauce or add jalapeños.

Vegetarian? Substitute chicken with black beans or vegetables.

Customize cheese with your favorites like pepper jack or Mexican blend.
