Ingredients
1.5 lbs (680g) chicken breast cutlets
8 oz (225g) mushrooms, sliced
2 tbsp butter
1 tbsp olive oil
2 cloves garlic, minced
1 cup (240ml) heavy cream or half-and-half
1/2 cup (120ml) chicken broth
1 tsp dried thyme
1/2 cup (50g) parmesan cheese, grated
Fresh parsley for garnish
Instructions
Preheat oven to 375°F (190°C).
In a skillet, sear chicken in olive oil until golden; remove and set aside in a baking dish.
In the same skillet, melt butter and sauté mushrooms and garlic until soft.
Stir in broth, cream, thyme, and parmesan; simmer until slightly thickened.
Pour the creamy mushroom sauce over the chicken in the baking dish.
Bake for 20-25 minutes until bubbly and chicken is cooked through.
Garnish with parsley and serve.
Notes
Serve over rice, pasta, or mashed potatoes to soak up the sauce.
Use cremini mushrooms for a deeper, earthier flavor.
