Description

A creamy and tangy macaroni salad with the classic flavors of deviled eggs.


Ingredients

  • 8 oz elbow macaroni
  • 6 hard-boiled eggs, peeled and chopped
  • 1/2 cup finely chopped celery
  • 1/4 cup finely chopped red onion
  • 2 tablespoons chopped fresh parsley
  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • 2 tablespoons sweet pickle relish
  • 1 tablespoon Dijon mustard
  • 1 teaspoon white vinegar
  • 1/2 teaspoon paprika
  • 1/4 teaspoon garlic powder
  • Salt and black pepper to taste

Instructions

  1. Cook the macaroni according to package directions in a large pot of salted boiling water until al dente. Drain well and rinse with cold water to stop the cooking process. Set aside to cool completely.
  2. Place eggs in a saucepan and cover with cold water. Bring to a boil over high heat, then cover and remove from heat. Let stand for 12 minutes. Drain and transfer to ice water to cool completely before peeling and chopping.
  3. In a large mixing bowl, combine the cooled macaroni, chopped hard-boiled eggs, celery, red onion, and fresh parsley.
  4. In a separate medium bowl, whisk together the mayonnaise, sour cream, sweet pickle relish, Dijon mustard, white vinegar, paprika, and garlic powder until smooth and well combined.
  5. Pour the dressing over the macaroni and egg mixture. Gently fold everything together until all ingredients are evenly coated with the dressing.
  6. Season with salt and black pepper to taste. Adjust seasoning if needed, adding more mustard or vinegar for tanginess if desired.
  7. Cover the bowl with plastic wrap and refrigerate for at least 2 hours or overnight to allow the flavors to meld together.
  8. Before serving, give the salad a good stir and check the seasoning. Garnish with an additional sprinkle of paprika and sliced green onions if desired.
