A creamy and tangy macaroni salad with the classic flavors of deviled eggs.

- 8 oz elbow macaroni
- 6 hard-boiled eggs, peeled and chopped
- 1/2 cup finely chopped celery
- 1/4 cup finely chopped red onion
- 2 tablespoons chopped fresh parsley
- 1/2 cup mayonnaise
- 1/4 cup sour cream
- 2 tablespoons sweet pickle relish
- 1 tablespoon Dijon mustard
- 1 teaspoon white vinegar
- 1/2 teaspoon paprika
- 1/4 teaspoon garlic powder
- Salt and black pepper to taste
Instructions
- Cook the macaroni according to package directions in a large pot of salted boiling water until al dente. Drain well and rinse with cold water to stop the cooking process. Set aside to cool completely.
- Place eggs in a saucepan and cover with cold water. Bring to a boil over high heat, then cover and remove from heat. Let stand for 12 minutes. Drain and transfer to ice water to cool completely before peeling and chopping.
- In a large mixing bowl, combine the cooled macaroni, chopped hard-boiled eggs, celery, red onion, and fresh parsley.
- In a separate medium bowl, whisk together the mayonnaise, sour cream, sweet pickle relish, Dijon mustard, white vinegar, paprika, and garlic powder until smooth and well combined.
- Pour the dressing over the macaroni and egg mixture. Gently fold everything together until all ingredients are evenly coated with the dressing.
- Season with salt and black pepper to taste. Adjust seasoning if needed, adding more mustard or vinegar for tanginess if desired.
- Cover the bowl with plastic wrap and refrigerate for at least 2 hours or overnight to allow the flavors to meld together.
- Before serving, give the salad a good stir and check the seasoning. Garnish with an additional sprinkle of paprika and sliced green onions if desired.
