Ingredients

1 lb (450g) boneless chicken pieces, cooked and shredded
2 (28 oz / 794g each) cans crushed tomatoes
1 cup (240ml) heavy cream
2 cups (480ml) chicken broth
1/2 cup (12g) fresh basil, chopped
3 cloves garlic, minced
1 tsp onion powder
2 tbsp (28g) butter


Instructions

  • In a large pot, melt the butter over medium heat and sauté the minced garlic for about 1 minute, until fragrant, being careful not to burn it.
  • Add the crushed tomatoes, chicken broth, and onion powder to the pot. Stir well to combine all ingredients.
  • Bring the mixture to a gentle simmer and let it cook for about 15 minutes, allowing the flavors to meld together.
  • Stir in the shredded chicken and heavy cream. Continue heating for about 5 minutes, just until the soup is warmed through (do not let it boil once the cream is added).
  • Stir in the freshly chopped basil right before serving to preserve its vibrant color and fresh flavor.

Notes

Fresh basil is essential for the best flavor; add it at the very end.
Avoid boiling the soup once the heavy cream has been added to prevent separation.
Taste and adjust seasoning (salt and pepper) before serving.
For an extra kick, add a pinch of red pepper flakes with the garlic.
