Description

A refreshing and flavorful Crispy Chickpea and Cucumber Tahini Salad that’s easy to make and perfect for a quick lunch or light dinner!


Ingredients

  • 400g / 1 ½ cups Chickpeas, canned, drained, and rinsed
  • 1 large Cucumber, peeled and diced
  • ½ medium Red Onion, thinly sliced
  • ¼ cup Fresh Parsley, chopped
  • 2 tbsp Fresh Mint, chopped
  • 2 tbsp Olive Oil
  • 1 tsp Smoked Paprika
  • ½ tsp Garlic Powder
  • ¼ tsp Salt
  • ¼ tsp Black Pepper
  • Tahini Dressing:
  • ¼ cup Tahini
  • 2 tbsp Lemon Juice, freshly squeezed
  • 1 tbsp Maple Syrup
  • 1 clove Garlic, minced
  • 24 tbsp Water, to thin the dressing
  • Salt and Black Pepper to taste

Instructions

  1. Heat olive oil in a skillet over medium heat. Add chickpeas, smoked paprika, garlic powder, salt, and pepper. Cook, stirring occasionally, until golden brown and crispy.
  2. In a small bowl, whisk together tahini, lemon juice, maple syrup, minced garlic, salt, and pepper. Add water, one tablespoon at a time, until the dressing reaches desired consistency.
  3. In a large bowl, combine cucumber, red onion, parsley, and mint. Add crispy chickpeas.
  4. Pour tahini dressing over the salad and toss gently to combine. Serve immediately.
