A refreshing and flavorful Crispy Chickpea and Cucumber Tahini Salad that’s easy to make and perfect for a quick lunch or light dinner!

- 400g / 1 ½ cups Chickpeas, canned, drained, and rinsed
- 1 large Cucumber, peeled and diced
- ½ medium Red Onion, thinly sliced
- ¼ cup Fresh Parsley, chopped
- 2 tbsp Fresh Mint, chopped
- 2 tbsp Olive Oil
- 1 tsp Smoked Paprika
- ½ tsp Garlic Powder
- ¼ tsp Salt
- ¼ tsp Black Pepper
- Tahini Dressing:
- ¼ cup Tahini
- 2 tbsp Lemon Juice, freshly squeezed
- 1 tbsp Maple Syrup
- 1 clove Garlic, minced
- 2–4 tbsp Water, to thin the dressing
- Salt and Black Pepper to taste
Instructions
- Heat olive oil in a skillet over medium heat. Add chickpeas, smoked paprika, garlic powder, salt, and pepper. Cook, stirring occasionally, until golden brown and crispy.
- In a small bowl, whisk together tahini, lemon juice, maple syrup, minced garlic, salt, and pepper. Add water, one tablespoon at a time, until the dressing reaches desired consistency.
- In a large bowl, combine cucumber, red onion, parsley, and mint. Add crispy chickpeas.
- Pour tahini dressing over the salad and toss gently to combine. Serve immediately.
