Creamy, comforting CrockPot Chicken Tortellini – the perfect easy dinner!
Ingredients

- 1.5 lbs boneless, skinless chicken breasts
- 1 (20 ounce) package of frozen cheese tortellini
- 1 (10.75 ounce) can condensed cream of chicken soup
- 1 (10 ounce) can diced tomatoes and green chilies, undrained
- 1 (8 ounce) package cream cheese, softened
- 1/2 cup chicken broth
- 1/4 cup chopped fresh parsley
- 1 teaspoon garlic powder
- 1/2 teaspoon onion powder
- Salt and pepper to taste
Instructions
- Place chicken breasts in the crockpot.
- Mix cream of chicken soup, diced tomatoes and green chilies, cream cheese, chicken broth, garlic powder, onion powder, salt, and pepper in a bowl.
- Pour mixture over chicken breasts.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours, or until chicken shreds easily.
- Remove and shred chicken. Return to crockpot.
- Stir in frozen cheese tortellini and parsley.
- Cover and cook on high for 30 minutes, or until tortellini is tender.
- Serve hot and enjoy!
Notes
- Vegetarian: Substitute chicken with white beans or chickpeas.
- Spicy: Add a pinch of red pepper flakes.
