- 1 pound Italian-style chicken sausage, casings removed
- 1 medium butternut squash, peeled, seeded, and cubed
- 1 large onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon dried sage
- 1/2 teaspoon dried thyme
- 1/4 teaspoon red pepper flakes (optional)
- 1 pound pasta (penne, rotini, or farfalle work well)
- 4 cups chicken broth
- 1/2 cup grated Parmesan cheese
- 2 tablespoons olive oil
- Salt and black pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat oven to 400°F (200°C). Toss squash with 1 tablespoon of olive oil, salt, and pepper. Roast for 20-25 minutes, until tender.
- Cook pasta according to package directions; drain and set aside.
- Heat remaining olive oil in a large pot. Add sausage and cook until browned.
- Add onion and cook until softened, about 5 minutes. Add garlic, sage, thyme, and red pepper flakes; cook 1 minute.
- Pour in chicken broth and bring to a simmer, scraping up browned bits.
- Add cooked pasta and roasted squash; stir to combine.
- Stir in Parmesan cheese until melted. Season with salt and pepper.
- Serve immediately, garnished with fresh parsley.
