- 6 Large Eggs
- 1/4 cup Milk (or dairy-free alternative)
- 1/2 cup Diced Bell Peppers
- 1/2 cup Diced Onions
- 1/2 cup Shredded Cheddar Cheese (or vegan cheese)
- 1/4 cup Chopped Spinach
- 1/4 cup Cooked Turkey Sausage (optional)
- Salt and Pepper to Taste
- Cooking Spray or Olive Oil for Greasing
Instructions
- Preheat oven to 375°F (190°C). Grease a 12-cup muffin tin.
- Whisk eggs and milk together, season with salt and pepper.
- Stir in bell peppers, onions, spinach, and sausage (if using).
- Fill muffin cups 3/4 full with the egg mixture.
- Sprinkle with cheese.
- Bake for 18-20 minutes, or until set and golden.
- Cool slightly before removing from the tin.
- Serve warm.
