Ingredients

  • 6 Large Eggs
  • 1/4 cup Milk (or dairy-free alternative)
  • 1/2 cup Diced Bell Peppers
  • 1/2 cup Diced Onions
  • 1/2 cup Shredded Cheddar Cheese (or vegan cheese)
  • 1/4 cup Chopped Spinach
  • 1/4 cup Cooked Turkey Sausage (optional)
  • Salt and Pepper to Taste
  • Cooking Spray or Olive Oil for Greasing

Instructions

  1. Preheat oven to 375°F (190°C). Grease a 12-cup muffin tin.
  2. Whisk eggs and milk together, season with salt and pepper.
  3. Stir in bell peppers, onions, spinach, and sausage (if using).
  4. Fill muffin cups 3/4 full with the egg mixture.
  5. Sprinkle with cheese.
  6. Bake for 18-20 minutes, or until set and golden.
  7. Cool slightly before removing from the tin.
  8. Serve warm.
